At this year’s PKV Autumn Reception at the Museum of Communication, Hoflieferanten Berlin catered for 250 guests with flying appetisers and a buffet inspired by the “To Remember” catering style. The evening also showed how professional teamwork works when something unexpected is missing at short notice.
The Museum of Communication in Berlin provided a new setting for the PKV Association’s annual autumn reception this year. 250 guests came together for an evening of strong voices, clear messages and catering that was deliberately approachable, familiar and contemporary.
Project management for Hoflieferanten Berlin was handled by Lars Andresen. Together with the team on site, he ensured that everything ran smoothly from the reception through to the buffet, and that the culinary experience blended seamlessly into the evening.
Familiar flavours, served with a contemporary touch
The evening’s culinary concept was based on the “To Remember” catering style: hearty cuisine, familiar flavours and regional ingredients – presented in a precise, pared-back way and without the usual pub clichés. The appetisers were served by flying service. They included a free-range chicken lollipop with lingonberry glaze, grass-fed beef tartare with fried capers, a char praline with lime gel and a buffalo mozzarella cream with basil and tomato.
The salmon trout tartare with cucumber and horseradish also drew on familiar flavours while presenting them in a light, contemporary form. The vegan alternative featured pulled celery, pointed cabbage and a bean and edamame salad. This created a flying selection that catered to different preferences while maintaining a clear culinary identity.
The centrepiece of the main-course buffet was beef loin with rosemary potatoes, grilled vegetables and port jus. It was accompanied by a potato waffle with herb quark and linseed oil crunch – a dish that captures the “To Remember” style particularly well: familiar, hearty and reimagined at the same time. This combination is at the heart of the catering style. Simple, clear flavours become an urban Berlin experience that international guests can appreciate intuitively.
When preparation meets teamwork
What feels effortless to guests is the result of precise teamwork behind the scenes. And sometimes that means solving an unexpected challenge at exactly the right moment.
Despite careful preparation, detailed checklists and well-coordinated processes, the hose for the beer dispensing system was missing shortly before the event began. A small detail with a major impact – without the hose, there would be no freshly tapped beer. Thanks to the quick collaboration with our colleague Jan Treipl from AXICA, the problem was resolved just in time. The beer dispensing system was ready to go when the event started, and the evening ran smoothly.
That is what professional event planning is all about: good preparation is the foundation. When something unexpected happens nevertheless, what matters is having a clear overview, short lines of communication and a team that finds solutions together. This is what the project management led by Lars Andresen stands for – as does the entire team at Hoflieferanten Berlin.
